Cream of asparagus soup Recipe

Ingredients

  • about 1kg asparagus spears (or in my case, trimmings!)
  • water for steaming/boiling
  • 1 medium onion, finely chopped
  • 1 Tbsp olive oil
  • 1 litre vegetable stock (I use Marigold bouillon powder)
  • 150ml cream
  • salt and pepper to taste
