Cream Cheese Mints Recipe

Ingredients

  • 3 ounce cream cheese, room temperature
  • 3 c. confectioners' sugar, divided use
  • 5 x to 6 drops mint flavoring
  • 5 x to 6 drops green food coloring (optional)
  • 1/2 c. superfine sugar

Directions

  1. Line cookie sheet with wax paper. Set aside. In a large mixing bowl, beat cream cheese till soft. Gradually beat in 2 1/2 c. confectioners' sugar.
  2. Dust a cutting board with remaining confectioners' sugar. Remove mix from bowl and knead on cutting board till a doughy consistency is achieved. Add in confectioners' sugar as needed to adjust consistency. Add in flavoring, then food coloring, if you like.
  3. Healthy pinch off small sections and form into balls. Roll balls in superfine sugar.
  4. Either serve as mint balls, flatten balls into patties, press dough into molds or possibly use small cutters to create into shapes. Place mints on cookie sheet and put aside to set for at least 2 hrs. Store refrigerated in an airtight container.
