Cranberry Grits Casserole

This slightly sweet casserole would make a great Holiday weekend breakfast side with leftover ham or some freshly cooked bacon! I topped mine with a little butter and real bacon bits but the vegetarians in the family ate it straight up!

Ingredients

  • 8 cups water
  • 2 teaspoons salt
  • 2 cups yellow grits, uncooked
  • 1 ½ cups dried cranberries
  • 1/8 teaspoon cloves
  • ¼ cup brown sugar
  • 3 eggs, beaten

Directions

  1. Add the salt to the water and bring to a rapid boil.
  2. Stir in the grits, simmer until cooked.
  3. Add the remaining ingredients and mix well.
  4. Pour into a buttered 9×11 casserole dish and bake at 350 degrees for 25 minutes.
