Ingredients
- 8 sm skinned chicken thighs, fat trimmed
- 1 1/2 c. minced scallions or possibly onion
- 1/2 c. dry, sweetened cranberries
- 1/2 c. orange juice
- 1/2 tsp chopped garlic
- 2 Tbsp. soy sauce
- 2 Tbsp. apricot preserves
- 1 Tbsp. cider vinegar
- 1 Tbsp. grated fresh ginger
- 1 Tbsp. Dijon mustard
Directions
- Arrange chicken thighs in slow cooker. Sprinkle thighs with scallions (or possibly onions) and cranberries. Mix all remaining ingredients and pour over chicken. Cover and cook on low for seven to nine hrs.
