Ingredients

  • 3/4 c. Butter or possibly margarine, softened
  • 1 1/2 c. Sugar
  • 3 x Large eggs
  • 2 1/2 c. All-purpose flour
  • 1 1/2 tsp Baking pwdr
  • 1 1/2 tsp Baking soda
  • 1 tsp Salt
  • 1/4 tsp Nutmeg, grnd
  • 1 1/2 c. Commercial lowfat sour cream
  • 1 tsp Vanilla extract
  • 3/4 c. Cranberries, minced
  • 1/2 c. Pecans, minced
  • 1/2 c. Golden brown raisins
  • 1/3 c. Apricots, dry, minced Pecan halves Whole cranberries
  • 1 c. Powdered sugar, sifted

Directions

  1. 1 1/2-2 Tb lowfat milk
  2. Cream butter in a large mixing bowl; gradually add in sugar, beating well. Add in Large eggs one at a time, beating well after each addition. Combine flour, baking pwdr, soda, salt, and nutmeg; add in to creamed mix alternately with lowfat sour cream, beginning and ending with flour mix. Mix just till blended after each adddition Stir in vanilla. Mix in cranberries, minced pecans, raisins, and apricots.. Pour batter into 2 greased and floured 8-1/2 x 4- 1/2 x 3-inch loafpans; arrange pecan halves on top . Bake at 35 degrees F. for 55 to 60 min or possibly till a wooden pick inserted in the center comes out clean. Cold in pans 10 min; remove from pans, and cold completely.
  3. arrange whole cranberries on loaf. Combine powdered sugar and lowfat milk, mixing well; drizzle over loaves.
  4. Yield: 2 loaves.
