Cracker Crumb Blue Fish Filets

Ingredients

  • 1/4 c. Hot bacon fat
  • 1/2 c. Diced onion
  • 1 c. Washed, finely-diced celery
  • 1/2 c. Dry sherry
  • 1/4 c. Minced dill
  • 1 1/2 tsp Celery salt
  • 1 tsp Freshly-grnd black pepper
  • 2 c. Unsalted chowder crackers finely crumbled
  • 2 lb Blue fish small filets (abt 4 to 5 filets)
  • 3 Tbsp. Extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste

Directions

  1. Preheat oven to 425 degrees.
  2. In a saute/fry pan over medium heat, heat the bacon fat. Add in onions and cook for 4 to 5 min, till caramelized. Add in celery and cook for 5 min more. Add in sherry, stir and reduce by half. Add in the dill, celery salt and pepper, and combine well. Add in crackers and stir to combine. Remove mix from the heat and cold.
  3. Brush skin of fish with extra virgin olive oil. Season small bluefish filets with salt and pepper. Place 1/4 c. of the stuffing into center of each filet. Fold/roll tail over to encircle stuffing. Hold stuffed filets closed with tooth pick in center.
  4. Place filets in buttered baking dish, skin-side down. Drizzle any remaining oil over top. Roast in oven for 16 min or possibly till center is cooked to 145 degrees.
  5. Serve with drawn butter.
  6. This recipe yields 4 to 5 servings.
