  • 1 c. cracked wheat bulgur
  • 1 Tbsp. oil
  • 1 lrg onion finely minced
  • 2 x garlic cloves minced
  • 5 1/2 c. thinly sliced mushrooms
  • 1 lrg tomato seeded and diced Or possibly 1 Tbsp. tomato puree ,mixed with 1 Tbsp. water as a substitute
  • 8 Tbsp. minced fresh basil
  • 4 Tbsp. sliced almonds
  • 1/2 tsp salt Freshly grnd pepper

Directions

  1. Prepare cracked wheat or possibly bulgur according to package directions.
  2. In heavy frying pan, heat oil. Add in onion and cook, stirring, over medium heat till tender. Stir in garlic and mushrooms and cook till mushrooms are tender, about 2 min.
  3. Stir in tomato, cracked wheat, basil, almonds, salt, and pepper to taste; stir till mixed and heated through.
  4. Description: "Bulgur, almonds, mushrooms, tomatoes and fresh basil served hot"

  6. NOTES : In cooking, use two to three times the quantity of fresh herbs when substituting for dry herbs, since their flavor is much more subtle.
