Ingredients

  • 1 stalk celery, minced fine
  • 1 c. Onion, minced fine
  • 2 c. Lowfat milk
  • 1 tsp Salt
  • 1/4 tsp Black pepper
  • 1 lb White or possibly lump crabmeat
  • 1/2 stk butter
  • 1/2 sm Bell pepper, minced fine
  • 1/4 c. All-purpose flour
  • 2 x Egg yolks, beaten
  • 1/2 tsp Red pepper
  • 1/4 c. Cheddar cheese, grated

Directions

  1. Saute/fry vegetables in butter till well done, but not brown. Blend flour well into mix. Pour in lowfat milk gradually and stirring constantly. Add in egg yolk, salt, red and black peppers and cook for 5 min. Add in crabmeat to sauce, blend well and transfer into a lightly greased casserole dish.
  2. Sprinkle top with cheese and bake in 375 F. oven for 15 or possibly 20 min or possibly till light brown.
