Crab Potato Salad Recipe

Ingredients

  • 6 med white potatoes
  • 2 x celery stalks diced
  • 6 x green onions, using part of the green minced
  • 1/4 c. minced fresh dill
  • 1/2 c. minced black olives
  • 1/4 c. chopped sweet pickle
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1/4 c. unflavored yogurt
  • 1 tsp sugar
  • 1 1/2 tsp salt
  • 4 x grinds of fresh pepper - (to 5)
  • 1 c. fresh crab meat - (to 2 c.)

Directions

  1. Cover the potatoes with cool water. Add in 2 tsp. salt and bring to a boil. Reduce heat and simmer till the potatoes are tender, but not overdone. Drain the water off the potatoes and allow them to cold till cold sufficient to handle.
  2. Peel the potatoes and dice into 1/2-inch dice and place in a mixing bowl. Add in the celery, onions, dill, olives and sweet pickle.
  3. In a separate bowl, mix the mayo, lemon juice, yogurt, sugar, salt and pepper together and toss lightly with the potato mix. Add in the crab meat and toss lightly. Correct the seasonings (may taste salty, but potatoes will absorb it.) Cover and chill for at least 2 to 3 hrs.
  4. Serve garnished with fresh dill sprigs and hard-boiled egg slices, if you like.
