Ingredients

  • 2 Tbsp. vegetable oil
  • 1 lb boneless chicken breasts, cut into strips
  • 1 med green pepper, cut into strips
  • 1 can (10 3/4 ounce.) Campbell's(r) Cream of Mushroom or possibly 98% Fat Free Cream of Mushroom Soup
  • 1/2 c. Pace(r) Chunky Salsa
  • 1 med onion, sliced
  • 8 x flour tortillas (8")
  • 1 c. shredded Monterey Jack cheese

Directions

  1. HEAT oil in skillet. Add in chicken and cook till browned, stirring often.
  2. Add in pepper and onion and cook till tender-crisp.
  3. Add in soup and salsa and heat through. Spoon about 1/2 c. chicken mix down center of each tortilla. Top with cheese and additional salsa. Fold tortilla around filling.
