  • 1/4 c. Extra virgin olive oil
  • 1 med onion, thinly sliced
  • 2 Tbsp. Chopped shallots
  • 1 1/2 tsp Chopped garlic
  • 1/4 c. All purpose flour
  • 1 1/2 c. Courgette, sliced into 1/4 inch thick rounds
  • 1 1/2 c. Crookneck squash, sliced into 1/4 inch thick rounds
  • 3 c. Rich chicken stock
  • 3 c. Whipping cream
  • 2 tsp Chopped fresh basil
  • 2 tsp Chopped fresh oregano Salt & freshly grnd pepper

Directions

  1. Heat oil in heavy large saucepan over medium-low heat. Add in onion, shallots and garlic and cook till onion is translucent/soft, stirring occasionally, about 10 min. Add in flour and stir 3 min. Add in courgette and crookneck squash and cook till softened, stirring frequently, about 5 min. Stir in stock, cream, basil and oregano. Reduce heat and simmer 20 min. Season with salt and pepper.
