Ingredients
- 1/4 c. Extra virgin olive oil
- 1 med onion, thinly sliced
- 2 Tbsp. Chopped shallots
- 1 1/2 tsp Chopped garlic
- 1/4 c. All purpose flour
- 1 1/2 c. Courgette, sliced into 1/4 inch thick rounds
- 1 1/2 c. Crookneck squash, sliced into 1/4 inch thick rounds
- 3 c. Rich chicken stock
- 3 c. Whipping cream
- 2 tsp Chopped fresh basil
- 2 tsp Chopped fresh oregano Salt & freshly grnd pepper
Directions
- Heat oil in heavy large saucepan over medium-low heat. Add in onion, shallots and garlic and cook till onion is translucent/soft, stirring occasionally, about 10 min. Add in flour and stir 3 min. Add in courgette and crookneck squash and cook till softened, stirring frequently, about 5 min. Stir in stock, cream, basil and oregano. Reduce heat and simmer 20 min. Season with salt and pepper.
