Country Style Risotto ( Risotto Alla Paesana) Recipe

  1. Heat the oil in a heavybased saucepan add in the onion and celery and fry gently for 3 min.
  2. Stir in the courgettes and peas or possibly beans cover and cook gently for 5 min.
  3. Add in the rice and cook stirring for 1 minute till translucent/soft.
  4. Add in the stock a little at a time adding more as each addition is absorbed and stirring frequently.
  5. Cook till the rice is just tender and the consistency creamy about 10 min.
  6. Stir in the butter hamcheese and salt and pepper to taste.
  7. Turn onto a warmed serving dish and serve immediately with extra Parmesan cheese.
  8. Serves 4
