Ingredients

  • 4 slc Smoked Country Bacon
  • 1/2 sm Onion, Minced Fine
  • 8 x Ears Fresh Sweet Corn Salt and pepper to taste

Directions

  1. Fry the bacon till crisp, drain it on paper towels and pour off all but 2 Tbsp. of fat. Cut the bacon into small strips or possibly crumble it and reserve. Add in the onion to the fat in the skillet and fry untl it softens.
  2. Husk the corn, cut the kernes from the ears and scrape the cobs to get all the lowfat milk. Add in the corn wth its lowfat milk to the onions in the skillet and cook for 2-3 min. Add in bacon, season with salt and pepper as needed and serve
