Countdown to Thanksgiving: Carolina Sweet Potato Pie Recipe

Ingredients

  • 2 cups all-purpose flour
  • 1⁄4 teaspoon salt
  • 1⁄2 cup lard or vegetable shortening, chilled and cut into small pieces
  • 5 tablespoons butter, chilled and cut into small pieces
  • 1⁄4 cup ice water
  • 1 large egg, lightly beaten
  • Filling ingredients:
  • 2 pounds sweet potatoes, peeled and cut into large chunks
  • 1 cup packed dark brown sugar
  • 3 tablespoon granulated sugar
  • 1⁄4 pound butter, softened
  • 1 teaspoon ground cinnamon
  • 1⁄2 teaspoon salt
  • 1⁄4 teaspoon ground ginger
  • 1⁄4 teaspoon ground nutmeg
  • 3 large eggs, separated
  • Zest of 1 small orange, finely grated
  • 1⁄2 cup freshly squeezed orange juice
  • 1⁄2 cup table (18%) cream
  • To reduce saturated fat, use your favorite buttery spread instead of butter in the filling. (I’m not sure you can get away with it in the pie crust.)
