Cottle Ware's Tomato Salad Dressing

This is a copycat recipe of the tomato salad dressing dish served at The Famous King's Inn in Kingsville, Texas. Recipe from "Texas Eats." Can be used with seafood, too. For a large group of 16 or more.

Ingredients

  • 2 1/2 cups Antoinette's Tartar Sauce, or favorite commercial brand
  • 3 pickled jalapenos, minced
  • 2 hard boiled eggs, minced
  • 1/2 tsp. curry powder
  • 2 tsp. anchovy paste
  • 1 sleeve Ritz Saltines, crushed
  • fresh sliced tomatoes
  • parsley for garnish

Directions

  1. Mix all dressing ingredients in a bowl, cover, refrigerate for several hours.
  2. Slice tomatoes and plate. Decorate with parsley.
  3. Serve sauce on the side.
