Ingredients

  • 4 sm. baking potatoes
  • 2 c. 1% cottage cheese
  • 1/2 c. skim lowfat milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • Paprika
  • 1/2 teaspoon summer savory

Directions

  1. Wash and scrub potatoes. Prick skins in several places. Bake at 425 degrees for 45 to 50 min till tender. Remove from oven, cut in half, scoop out insides of potatoes leaving skins intact, save skins. Mash potatoes thoroughly.Add in remaining ingredients except paprika. Beat till fluffy. Put mashed potato mix into potato skins and sprinkle paprika over the tops. Bake at 400 degrees till heated thoroughly and tops are golden brown, about 10 to 15 min. Makes 4 servings, 2 halves = 1 serving. Single serving = 1 protein, 1 starch.
