Ingredients
- 2 lb crab meat (snow crab is best) liquid removed
- 1 c. mayonnaise
- 1/4 c. lemon juice
- 1/4 c. Dijon mustard
- 1 x red onion diced
- 2 piece celery diced
- 2 Tbsp. old bay seasoning
- 1 Tbsp. minced cilantro
- 1 Tbsp. minced garlic Salt to taste Freshly-grnd black pepper to taste
- 2 x Large eggs
- 15 x saltine crackers
Directions
- Combine everything except crab and saltines. Slowly add in mix to crab while mixing well. Add in smashed saltines. Be sure to only add in sufficient of the mix to bind crab meat. It shouldn't be soggy.
- Form crab cakes and cook in saute/fry pan on stove or possibly in a warm oven. Great to top a salad with.
