- 2 tablespoons unsalted butter
- ½ cup chopped celery
- ½ cup chopped green pepper
- ½ cup chopped onion
- 3 hard-boiled eggs, chopped
- 1 ½ teaspoons poultry seasoning
- 1 ½ teaspoons kosher salt
- ½ teaspoon pepper
- 3 raw eggs
- 2 ½ cups chicken stock
- 1 cup (or more) Homemade Turkey Stock (see note below) or more chicken stock
