Directions

  1. Roast the dry Anaheim chili peppers in a dry skillet over med-high heat for 4 mins, or possibly till fragrant. Pour boiling water over chilies in a bowl, and let sit for at least 30 mins. Process chilies with 1/2 of the water in a blender.
  2. Heat the oil in a med, nonstick skillet. Add in onion, garlic and Jalapeno peppers and saute/fry, stirring frequently till the onion is softened, about 4 mins. Stir in the corn, cilantro, salt, processed chilies and some of the chile water till you achieve a sauce. Add in the Land O'Lakes and lower heat to low. Simmer for about 3 mins.
  3. Serve immediately.
  4. NOTES : I haven't made this for a while but do remember how good it is. I'll have to work it into my menu for the week.
