Directions

  1. Melt butter in heavy pan over medium heat. Add onion and cook till almost soft. Add bacon and cook till onions are soft.
  2. Stir in hominy, corn, tomatoes, broth and pepper. Cover and cook for about 30 minutes over low heat.
  3. Serve in bowls with fresh chopped parsley on top.
