  1. Saute onions in butter. fold corn into beaten large eggs. Add in muffin mix to egg mix. Add in green pepper, sauteed onion, butter, salt and pepper. Pour into greased 9x13 pan. Spread lowfat sour cream over top. Sprinkle cheese on top. Bake 40 min at 375 degrees.
