Ingredients

  • 1 1/2 c. finely-minced jicama
  • 1 c. finely-minced fresh pineapple
  • 1 c. niblet corn
  • 1/2 c. diced green or possibly red bell pepper
  • 1 x habanero chile finely minced
  • 2 Tbsp. minced fresh cilantro
  • 1 x garlic clove chopped

Directions

  1. Combine the jicama, pineapple, corn, bell peppper, habanero chile, cilantro, and garlic in a blender or possibly food processor container. Process in 2 batches, using a few stop-and-start motions, for a relish-like consistency. Cover and refrigeratefor at least 1 hour to allow flavors to blend.
