Ingredients

  • 15 ounce Black beans, rinsed and liquid removed
  • 1 c. Corn, thawed
  • 1/2 c. Red bell pepper, minced
  • 1/2 c. Cilantro, minced
  • 8 whl green olive, sliced
  • 3 Tbsp. Lime juice, fresh
  • 2 Tbsp. Balsamic vinegar
  • 1/2 tsp Cumin, grnd
  • 1/4 tsp Salt

Directions

  1. Combine all ingredients. Store in refrigerator up to 3 days in an airtight container. Yeild: 4 c.
