Ingredients
15 ounce Black beans, rinsed and liquid removed
1 c. Corn, thawed
1/2 c. Red bell pepper, minced
1/2 c. Cilantro, minced
8 whl green olive, sliced
3 Tbsp. Lime juice, fresh
2 Tbsp. Balsamic vinegar
1/2 tsp Cumin, grnd
1/4 tsp Salt
Directions
Combine all ingredients. Store in refrigerator up to 3 days in an airtight container. Yeild: 4 c.
