Ingredients

  • 1 bn Coriander
  • 2 x Garlic cloves
  • 2 Tbsp. Pumpkin leaves
  • 2 Tbsp. Fresh lime juice
  • 2 tsp Salt
  • 1 tsp Freshly grnd pepper
  • 5 Tbsp. Extra virgin olive oil

Directions

  1. In a food processor, combine the corriander, garlic, pumpkin seeds, lime juice, salt and pepper. With the motor running slowly add in the extra virgin olive oil till the sauce is emulsified. May be prepared two days ahead. Bring to room temp 1 hour before serving.
