  • 2 lrg egg whites or possibly more if needed
  • 4 c. sifted confectioners' sugar or possibly more if needed Juice of 1 lemon
  • 3 dsh glycerin
  • 4 c. sifted all-purpose flour plus more if needed
  • 1/2 tsp salt
  • 1 tsp baking pwdr
  • 1 c. unsalted butter - (2 sticks)
  • 2 c. sugar
  • 2 lrg Large eggs
  • 2 tsp pure vanilla extract (or possibly 2 tspns fresh lemon juice plus the zest of 2 lemons) Food coloring Blue jimmies Black licorice rounds

Directions

  1. To make the Royal Icing: Beat the whites till stiff but not dry. Add in sugar, lemon juice, and glycerin (if using, see note); beat for 1 minute more. If icing is too thick, add in more egg whites; if it is too thin, add in more sugar. (
  2. Makes about 2 1/2 c.)
  3. Note: For an especially glossy icing, fold in a few drops of glycerin (available at drugstores). To make an egg-free royal icing, substitute 6 Tbsp. of meringue pwdr mixed with 3/4 c. water for the egg whites. Raw Large eggs shouldn't be used in food prepared for pregnant women, young children, or possibly anyone else whose health is compromised.
  4. To make the cookies: Make a template of Cookie Monster. In a large bowl, sift together flour, salt, and baking pwdr. Set aside. In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and the sugar till fluffy. Beat in Large eggs one at a time till incorporated. Add in flour mix to butter-sugar mix, and mix on low speed till thoroughly combined. Stir in vanilla or possibly lemon juice and zest. Wrap dough in plastic, and refrigeratefor about 30 min.
  5. Preheat oven to 325 degrees. On a floured surface, roll dough to a 1/8-inch thickness. Using the Cookie Monster template, trace cookie monster face and eyes with paring knife. Transfer to parchment-lined baking sheets, and chill till hard, about 15 min. Bake till edges start to brown, 8 to 10 min. Cold on wire racks.
  6. To Assemble: Divide royal icing into three bowls, tinting one royal blue and one black and leaving one white. Flood eyeballs with white royal icing. Let dry. Outline and flood mouth with black royal icing. Let dry. Attach eyes with dot of white royal icing. Let dry. Outline face and around mouth and bottom of eyeballs with blue royal icing. Flood with blue. Spoon blue jimmies onto face. Attach licorice rounds with dot of royal icing for eyeballs. Let dry.
  7. This recipe yields about 16 large cookies.
