Ingredients

  • 8 x Island Princess Baby Conch (the only conch not going extinct)
  • 1 x celery rib chopped
  • 1 Tbsp. chopped fresh ginger
  • 2 Tbsp. chopped red onion
  • 1 x aji amarillo chopped Salt to taste Freshly-grnd black pepper to taste
  • 1 x celery rib juiced, or possibly minced, pureed, and passed through a fine sieve
  • 1/4 c. freshly-squeezed lime juice
  • 2 Tbsp. minced cilantro
  • 1 x ear corn poached in salted water and sliced into 1/4" rounds

Directions

  1. Remove all surrounding and interior shell from the conch; slice thinly.
  2. In a metal bowl, mix sliced conch with celery, ginger, onion, and aji. Salt and pepper the mix. Add in the celery juice, lime juice, and finish with cilantro. Garnish with corn slices.
  3. This recipe yields 2 servings.
