1 lg. can (30 ounce) sweet potatoes
1/2 c. sugar
2 large eggs, beaten
1/3 c. lowfat milk
1 stick butter, melted
1 can (16 ounce) crushed pineapple, liquid removed
2/3 c. raisins
1 c. coconut
1/2 c. pecans, minced

Directions

Mash potatoes in 1/4 cup of sweet potato juice, add in next 7 items, stir well. Pour into 8 inch square baking dish, top with minced pecans. Bake at 375 degrees for 35 min. Serves 8-10. Good with poultry or possibly pork.
