%3C/p%3E%3Cp%3EI%20will%20be%20reviewing%20the%20cookbook%20closer%20to%20it's%20December%20release...%20this%20is%20just%20announcement%20to%20let%20you%20know%20that%20it%20is%20coming!%20%20I%20am%20literally%20counting%20the%20days%20until%20December%20when%20I%20can%20get%20my%20hands%20on%20a%20copy%20of%20this%20book;%20you%20will%20be%20the%20first%20to%20know!%3C/p%3E%3Cp%3EI%20had%20the%20honor%20of%20testing%20a%20few%20of%20the%20gluten%20free%20cake%20recipes%20in%20this%20book%20for%20Anne%20Byrn%20while%20she%20was%20writing%20it,%20and%20even%20had%20the%20pleasure%20of%20chatting%20with%20her%20about%20gluten%20free%20baking%20on%20the%20phone.%20%20She%20is%20such%20a%20warm%20and%20friendly%20person,%20no%20wonder%20every%20recipe%20I%20have%20ever%20made%20from%20her%20cookbooks%20tastes%20so%20comforting!%3C/p%3E%3Cp%3EMuch%20to%20my%20delight,%20I%20was%20recently%20asked%20to%20sample%20a%20recipe%20from%20The%20Cake%20Mix%20Doctor%20Bakes%20Gluten-Free%20called%20Kitchen%20Sink%20Gingerbread%20Cake,%20and%20was%20provided%20with%20a%20box%20of%20gluten%20free%20yellow%20cake%20mix%20for%20use%20in%20the%20recipe.%20%20The%20aroma%20of%20ginger%20and%20cinnamon%20made%20my%20house%20smell%20like%20the%20holidays%20when%20it%20was%20baking,%20and%20the%20final%20product%20was%20moist%20and%20tasted%20divine.%3C/p%3E%3Cp%3ERecipe%20Sneak%20Peek:%3C/p%3E%3Cp%3E1.%20Place%20a%20rack%20in%20the%20center%20of%20the%20oven%20and%20preheat%20the%20oven%20to%20350%20F.%20Lightly%20mist%20an%208-inch%20square%20pan%20with%20vegetable%20oil%20spray%20and%20set%20the%20pan%20aside.%3C/p%3E%3Cp%3E2.%20Place%20the%20cake%20mix,%20ginger,%20cinnamon,%20nutmeg,%20and%20cloves%20in%20a%20large%20mixing%20bowl%20and%20whisk%20to%20combine.%20Cut%20the%20butter%20into%20tablespoons,%20then%20add%20it%20and%20the%20eggs,%20apple%20cider%20or%20water,%20molasses,%20and%20vanilla%20or%20zest%20and%20beat%20with%20an%20electric%20mixer%20on%20low%20speed%20until%20the%20ingredients%20are%20just%20incorporated,%2030%20seconds.%20Stop%20the%20machine%20and%20scrape%20down%20the%20side%20of%20the%20bowl%20with%20a%20rubber%20spatula.%20Increase%20the%20mixer%20speed%20to%20medium%20and%20beat%20the%20batter%20until%20smooth,%201%201/2%20to%202%20minutes%20longer,%20scraping%20down%20the%20side%20of%20the%20bowl%20again%20if%20needed.%20Pour%20the%20batter%20into%20the%20prepared%20pan,%20smoothing%20the%20top%20with%20the%20rubber%20spatula,%20and%20place%20the%20pan%20in%20the%20oven.%3C/p%3E%3Cp%3E3.%20Bake%20the%20cake%20until%20the%20top%20springs%20back%20when%20lightly%20pressed%20with%20a%20finger,%2052%20to%2057%20minutes..%20Transfer%20the%20pan%20to%20a%20wire%20rack%20and%20let%20the%20cake%20cool%20completely,%2015%20to%2020%20minutes.%20if%20desired.%3C/p%3E%3Cp%3EKeep%20It%20Fresh!%20Store%20the%20cake%20in%20the%20pan,%20covered%20with%20plastic%20wrap%20at%20room%20temperature%20for%20up%20to%20three%20days.%20Freeze%20the%20cake,%20wrapped%20in%20aluminum%20foil,%20for%20up%20to%20one%20month.%20To%20serve%20the%20cake%20warm,%20reheat%20it,%20partially%20covered%20with%20aluminum%20foil,%20in%20a%20300%20F%20oven%20until%20warmed%20through,%2030%20minutes.%3C/p%3E%3Cp%3EThe%20Cake%20Mix%20Doctor%20Says:%3C/p%3E%3Cp%3ETry%20a%20variation%20with%201%20chopped,%20peeled%20apple%20stirred%20in%20once%20the%20batter%20is%20blended.%3C/p%3E%3Cp%3E*My%20adjustments%20to%20this%20recipe:%3C/p%3E%3Cp%3EI%20substituted%20Earth%20Balance%20Buttery%20Spread%20instead%20of%20butter%20to%20make%20this%20cake%20dairy%20free,%20with%20excellent%20results.%20%20My%20oven%20runs%20hot,%20so%20I%20reduced%20the%20baking%20time%20to%2048%20minutes.%20%20My%20cake%20was%20completely%20done%20in%2048%20minutes;%20next%20time%20I%20will%20check%20the%20cake%20after%2040%20minutes.%3C/p%3E%3Cp%3E%22Thirty%20million%20Americans%20are%20gluten-intolerant%20or%20have%20a%20gluten%20sensitivity,%20eliminating%20it%20from%20their%20diets%20because%20gluten%E2%80%94a%20protein%20found%20in%20wheat,%20rye,%20and%20barley%E2%80%94has%20been%20implicated%20in%20health%20issues%20ranging%20from%20respiratory%20problems%20and%20abdominal%20discomfort%20to%20anemia,%20anxiety,%20and%20infertility.%20The%20food%20industry%20has%20bullishly%20taken%20notice.%20Gluten-free%20baking%20products,%20including%20cake%20mixes%20from%20Betty%20Crocker,%20King%20Arthur,%20Whole%20Foods,%20and%20others,%20have%20increased%20sevenfold%20on%20grocery%20shelves%20in%20recent%20years,%20and%20the%20number%20of%20other%20gluten-free%20products%20has%20grown%20as%20well%E2%80%94832%20were%20introduced%20in%202008%20alone.%20And%20gluten-free%20options%20are%20on%20the%20menu%20of%20national%20restaurants%20like%20Boston%20Market,%20Chili%E2%80%99s,%20Ruby%20Tuesday,%20Outback%20Steakhouse,%20and%20others.%22%3C/p%3E%3Cp%3EABOUT%20THE%20AUTHOR:%3C/p%3E%3Cp%3EPRE-ORDER%20THIS%20BOOK:%3C/p%3E%3Cp%3EThe%20Cake%20Mix%20Doctor%20Bakes%20Gluten-Free%20
