  • sweet and sour vinaigrette:
  • 1 Tbsp. honey
  • 3 Tbsp. rice vinegar
  • 3 Tbsp. vegetable oil
  • 1 Tbsp. chopped fresh dill
  • 1/4 c. sweet pickle relish
  • 1/2 x red cabbage cored and shredded
  • 1/2 x savoy or possibly green cabbage cored and shredded
  • 2 x carrots shredded
  • 1 x yellow or possibly red bell pepper seeded de ribbed and cut into thin strips
  • 1 x salt and freshly grnd pepper to taste


  1. In a medium bowl whisk honey vinegar and oil together.
  2. Stir in dill and relish.
  3. In a large bowl combine cabbages carrots and bell peppers.
  4. Toss with vinaigrette.
  5. Add in salt and pepper.
  6. Taste is what this sweet pickle relish whisked up with a little rice wine vinegar adds to these colourfully intertwined shreds of cabbage and carrot.
