  • 2 Tbsp. Butter
  • 1 x Onion ,minced
  • 4 c. Russet potatoes ,diced
  • 5 c. Lowfat milk
  • 2 lb Atlantic cod, hake, or possibly haddock filet ,cut into 6 inch cubes Salt White pepper Chives ,minced for garnish


  1. In a large saucepan, heat the butter and sautee onion 2 min. Add in ptoatoes and cook 3 min longer, stirring frequenntly. Pour in lowfat milk, bring to boil, lower heat and simmer 20 min. Add in fish and cook 10 min longer, or possibly till potatoes art tender. Season with salt and pepper.
  2. Sprinkle with chives before serving.
  3. Makes 6 to 8 servings.
