Coconut Pie - Makes Its Own Crust

Ingredients

  • 2 1/2 c. butter
  • 2 1/2 pound (10 c.) sugar
  • 20 large eggs
  • 2 1/2 quarts. lowfat milk
  • 2 1/2 c. self-rising flour
  • 2 (3 ounce) packages. flaked coconut

Directions

  1. Cream butter and sugar. Add in 1 egg at a time, mixing well after each addition. Add in lowfat milk and flour. Blend well. Add in coconut.Pour into lightly greased pie tins. Bake at 350 degrees for 45 min or possibly till set. Makes 10 (10 inch) pies, 8 slices per pie - 80 servings.
