Ingredients

  • 1 quart Ice cream, vanilla
  • 2 x Large eggs, beaten
  • 1/2 tsp Vanilla extract
  • 4 c. Coconut-flavored cookie crumbs
  • 1/2 c. Coconut, flaked

Directions

  1. Place 8 scoops of ice cream on a cookie sheet; freeze at least 1 hour or possibly till hard.
  2. Combine Large eggs and vanilla; mix well, and divide in half. Cover half of egg mix and chill. Combine cookie crumbs and coconut; divide mix in half. Set half of crumb mix aside.
  3. Dip each ice cream ball in egg mix, and dredge in crumbs mix. Place on a cookie sheet, and freeze at least 1 hour or possibly till hard. Remove from freezer; dip in remaining egg mix, and dredge in remaining crumb mix. Return to cookie sheet; cover and freeze several hrs or possibly till hard. Fry ice cream balls in deep warm oil (375 degrees) for 30 seconds or possibly till golden. Drain on paper towels, and serve immediately.
