Ingredients

  • Crock Pot Mexican Chicken Lettuce Cups with Mango Salsa
  • Slow Cooker Mexican Chicken Ingredients:
  • 15 oz can tomato sauce
  • 4 oz can diced green chiles OR seeded & deveined fresh jalapeños, chopped
  • 1 tbsp cumin
  • 1 tbsp onion powder
  • 1 tsp salt
  • 1 tsp black pepper, ground
  • 2 lbs chicken breasts, boneless & skinless
  • 1 tbsp cornstarch (optional)
  • 1 head of butter or iceberg lettuce, separated into leaves
  • Salsa Ingredients:
  • 1 cup grape tomatoes, quartered
  • 1 cup mango, diced
  • 1/4 cup onion, diced
  • 1/4 cup cilantro, chopped
  • 1 large garlic clove, minced
  • 1 tbsp jalapeño peppers, minced (leaves seeds in for hot)
  • 2 tsp lime juice
  • 1/2 tsp cumin
  • 1/4 tsp salt
  • (Data is for 1 lettuce leaf + 1/2 cup chicken + 1/4 cup salsa)
