Ingredients

  • 1 medium red onion, chopped
  • 1 tablespoon coconut oil
  • 1 (15 ounce) can light coconut milk
  • 1 tablespoon garlic powder
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 1 teaspoon cardamom
  • 1 teaspoon cumin
  • 1/2 teaspoon cinnamon
  • 1 bay leaves
  • 1 teaspoon coriander
  • 1/2 teaspoon ginger
  • 1/2 teaspoon mace
  • 2 large, boneless, skinless, raw chicken breasts (about 7 ounces each)
  • Salt to taste after cooking (this really does need it to bring out the flavors)
