Clean Eating Pad Thai Soup Recipe

Ingredients

  • 1 package brown rice pad thai noodles, cooked separately to package directions
  • 6 cups chicken broth
  • 1 tbsp. garlic powder
  • 1 tbsp. coconut aminos or low sodium soy sauce
  • 1 tbsp. fish sauce
  • 1 tbsp. fresh lime juice
  • 2 mushrooms, sliced very thin (shiitake mushrooms are best)
  • 5-8 drops pure liquid stevia (optional, but adds something nice to the flavor)
  • 2 cups cooked chicken, shredded or cubed
  • 1 cup unsalted peanuts
  • 1 large green onion, greens only, thinly sliced
