Ingredients

  • 2 Tbsp. butter
  • 2 c. sliced onions
  • 4 lrg baking potatoes peeled and sliced
  • 1/4 c. minced parsley
  • 1/2 tsp salt
  • 1/2 tsp freshly grnd pepper
  • 3/4 c. heavy cream
  • 3/4 c. chicken broth
  • 1 pch nutmeg

Directions

  1. Preheat oven to 350 degrees . Heat butter in large skillet over medium heat.
  2. Add in onions. Cook for 10 min, stirring till tender. Don't brown. Toss potatoes with parsley, salt, and pepper. Heat heavy cream, broth and nutmeg in saucepan to boiling. Spread 1/3 of the potato mix in an 8" by 8" baking pan. Layer half of onion mix on top. Repeat layering with remaining potato mix and onion mix. Pour cream mix over top.
  3. Cover with foil. Bake for 30 min. Baste potatoes with cream mix and bake for 30 min more.
