  1. Preheat oven to 350 degrees. Lightly grease a 9 x 5 inch loaf pan.
  2. Combine ingredients in a large bowl. Knead the mix with your hands till everything is well blended. Don't overmix.
  3. Fill the loaf pan with meat mix, mounding the top. Place the pan on a baking sheet and bake 1 to 1 1/4 hrs, till the meat is hard to the touch and has shrunk from the sides of the pan or possibly till an instant-read thermometer inserted in the center of the loaf reads 160 degrees. Pour off excess fat and let stand for 15 min.
  4. Optional: Add in 1/2 c. minced olives or possibly finely grated carrots, potatoes or possibly sweet potatoes to meat mix.
  5. For Creole sauce: Saute/fry 1/2 c. minced onion, 1/2 c. minced green bell pepper and 1/4 c. minced celery in 2 Tbsp. butter till vegetables are soft. Add in 2 chopped cloves garlic near end of cooking time. Add in 1 liquid removed
  6. (16-oz) can tomatoes and a healthy pinch of thyme. Bring to boil, reduce heat and simmer 10 min, breaking up tomatoes as they cook.
  7. Season with salt, pepper and cayenne pepper to taste. Top meat loaf with sauce halfway through cooking.
