Ingredients

  • 3/4 c. Yellow cornmeal
  • 1/4 c. Flour
  • 2 tsp Salt
  • 1 tsp Cayenne pepper
  • 1/4 tsp Garlic pwdr
  • 4 x Farm-raised catfish fillets or possibly whole catfish Vegetable oil

Directions

  1. Combine cornmeal, flour, salt, cayenne and garlic pwdr. Coat catfish with mix, shaking off excess. Add in 1" layer of oil to a large skillet. Heat to 350 . Add in catfish in single layer and fry till golden, about 5 to 6 min depending on size. Remove and drain on paper towels.
