Ingredients
- 5 ounces Honey Graham Crackers, ground in a food processor
- 5 tablespoons unsalted butter, melted
- 1/3 cup granulated sugar
- pinch of salt
- For Filling:
- 3 (8-ounce) packages of cream cheese, softened
- 4 large eggs
- 1 cup plus 1 tablespoon granulated sugar
- 2 1/2 teaspoons vanilla extract, divided
- 1 lb sour cream
- For strawberry topping:
- 1 pint fresh strawberries, hulled and sliced
- 2 tablespoons granulated sugar
- Special Equipment: a 9-inch springform pan
