City Restaurant Apple Cranberry Pie Recipe

  • 5 x granny smith apples or possibly equiv
  • 1 pkt cranberries (12 ounce)
  • 1 1/2 c. sugar
  • 1/4 c. instant tapioca partially baked pie shell s streusel see recipe

Directions

  1. The size of cranberries. Place cranberries in food processor. Chop briefly, about 10 seconds. Combine apples and cranberries in large bowl.
  2. Add in sugar. Stir till fruit is coated with sugar. Cover bowl. Set aside till juices from fruit flow freely and sugar is almost completely dissolved, about 15 to 20 min. Stir tapioca into fruit and juice.
  3. Let soak additional 10 to 15 min. Fill Partially Baked Pie Shell with apple-cranberry filling. Sprinkle top generously with Streusel.
  4. Reserve any remaining Streusel for other use. Bake at 325 degrees till filling bubbles in center, about 45 min. If edges of pie shell begin to brown too quickly, cover with strips of foil.
  5. Makes 1 (9-inch)
  6. pie, or possibly 8 servings.
