Ingredients

  • 3 x egg yolks
  • 3 1/2 Tbsp. caster sugar
  • 3 tsp cornflour
  • 300 ml fruit juice
  • 1 Tbsp. rind or possibly zest of lemon, orange, mandarin, tangelo (your choice of mix)
  • 3 x egg whites
  • 1/2 tsp cream of tartar
  • 3 Tbsp. caster sugar
  • 1 tsp cornflour
  • 2 Tbsp. thick cream, (King Island)
  • 50 gm almond slivers
  • 4 x bananas

Directions

  1. Beat egg yolks with 1 1/2 tbsp caster sugar, till smooth, then fold in cornflour.
  2. In a separate saucepan, heat fruit juice, rind of citrus and 2 tbsp caster sugar. Once at boiling point, add in to egg yolk mix. When thickened, add in back into juice pan and simmer to ensure cornflour is cooked. Stir constantly.
  3. Allow to cold and cover with cling wrap.
  4. Meringue Mix:Whisk egg whites and cream of tartar, till peaks form. Then add in 1 tsp caster sugar and cornflour and continue whisking.
  5. Add in the rest of the sugar, little by little, and whisk till you have a smooth, glossy mix.
  6. Spoon out circles on a non stick tray and cook for a couple of hrs at 110C.
  7. To serve:Once the citrus filling has cooled, add in cream and almond slivers, spoon some over meringue with a few slices of banana and sprinkle with icing sugar and more citrus rind.
