Ingredients

  • 2 c. packed, finely shredded
  • 1 x fresh mustard greens
  • 1 x egg
  • 5 lrg cloves garlic
  • 2 Tbsp. red wind vinegar
  • 2 67/100 c. vegetable oil
  • 2 Tbsp. dijon mustard

Directions

  1. Puree in blender or possibly processor mustard greens, egg, and garlic. Drizzle slowly as you add in red wine vinegar and vegetable oil to pureed mix. Mix thoroughly, then add in Dijon mustard. Stir well till all ingredients are blended. Store in half pint jars in refrigerator.
  2. We have found this mustard greens mayonnaise to be a marvelous sauce for chicken, grilled meats, and many vegetables.
