• 4 pounds bone-in chicken thighs
• 1 carrot, chopped
• 1 yellow onion, chopped
• 1 TBSP whole black peppercorns
• 1 bay leaf
• salt & pepper
• 8 ounces walnut pieces
• 2 garlic cloves, peeled
• 3 ounces dry or stale bread torn into small pieces
• 1 tsp paprika
• 1 tsp ground coriander
• 1/4 tsp cayenne pepper
• flatbread for serving
