Cinnamon swirl banana bread

This tasty, sweet and comforting banana bread is one of my favourite treats. It is a bit sweeter than other banana breads but is so delicious with a cup of hot earl grey tea.

Ingredients

  • BREAD
  • 8 tbsp. (1 stick) unsalted, softened butter (room temp)
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 2 large eggs, beaten
  • 2 cups all purpose flour
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • 4 or 5 overripe mashed bananas
  • NOTE: I always keep overripe (peeled) bananas in a freezer bag the freezer to use in this recipe. I just thaw and use it. Bananas as always on hand this way.
  • SWIRL MIXTURE
  • 1/2 cup white sugar
  • 3 tbsp. brown sugar
  • 2 tbsp cinnamon powder

Directions

  1. Preheat oven to 350 degrees.
  2. Grease a bread loaf pan with butter or non-stick spray.
  3. With hand mixer, cream together the butter and sugar until creamy. Add eggs and vanilla extract until well combined. Fold in the mashed bananas gently.
  4. Pour one third of the banana batter into the prepared loaf pan. Mix the swirl ingredients in a bowl. Sprinkle with a third of the cinnamon, white sugar, brown sugar mixture over the top. Repeat this operation two more times. (You can swirl the first 2/3 mixture with a knife and then add the last 1/3) ending with the cinnamon/sugar mixture on top.
  5. Bake for 55 to 60 minutes or until a toothpick comes out clean.
