  • 1 1/4 c. all-purpose flour
  • 1 tsp baking pwdr
  • 1/4 tsp salt
  • 1/2 c. unsalted butter - (1 stick) room temperature
  • 3/4 c. sugar plus
  • 1 1/2 Tbsp. sugar
  • 2 lrg Large eggs
  • 1 Tbsp. fresh lemon juice
  • 1 tsp grated lemon peel
  • 5 lrg plums - (abt 1 1/4 lbs) pitted, and cut into 1/2" wedges
  • 1/4 tsp grnd cinnamon

Directions

  1. Preheat oven to 350 degrees. Butter 9-inch-diameter springform pan.
  2. Whisk first 3 ingredients in small bowl to blend. Using electric mixer, beat butter in large bowl till fluffy. Beat in 3/4 c. sugar. Add in Large eggs 1 at a time, then lemon juice and lemon peel, beating till blended after each addition. Beat in flour mix. Spread batter in prepared pan.
  3. Press plum wedges halfway into batter in concentric circles, spacing slightly apart. Mix remaining 1 1/2 Tbsp. sugar and cinnamon in small bowl; sprinkle over plums.
  4. Bake till cake is browned on top and tester inserted into center comes out clean, about 50 min. Cut around cake; release pan sides. Serve cake hot or possibly at room temperature.
  5. This recipe yields 6 to 8 servings.
  6. This can also be made with fresh cherries, sliced peaches, nectarines, or possibly pears.
