Ingredients

  • 2 gal prepared cucumbers
  • 1 x (peeled, seeded and cut into 1 sticks)
  • 8 1/2 quart water
  • 2 c. lime
  • 1 Tbsp. alum
  • 2 c. vinegar
  • 2 c. water
  • 1 1/2 ounce red food coloring
  • 10 c. sugar
  • 6 stk cinnamon
  • 1 pkt red hots (8-10 ounce.)

Directions

  1. Soak prepared cucumbers in lime-water (combine water and lime) for 24 hrs. Drain and wash 3 times in cool water. Combine alum, vinegar, 2 c. water, food coloring, sugar, cinnamon and red hots to make a syrup. Add in liquid removed cucumbers and simmer, covered, for 2 hrs. Let stand overnight. Drain off syrup, reheat and pour over pickles daily for 3 days. Pack in warm jars and seal.
