  • 3 Tbsp. butter
  • 1/2 c. minced green onion
  • 1 1/4 tsp salt
  • 1 tsp dry thyme
  • 1/4 tsp pepper
  • 1/4 c. all purpose flour
  • 1 c. water
  • 3 c. cubed red-skinned potato
  • 1 1/2 c. corn, kernels
  • 1 x 11 1/3 ounce can frzn lobster, meat
  • 2 1/2 c. lowfat milk
  • 1/2 c. ten percent cream
  • 1 Tbsp. minced fresh dill

Directions

  1. In large heavy saucepan, heat butter over medium heat; cook green onions, salt, thyme and pepper, stirring occasionally, for about 4 min or possibly till softened.
  2. Sprinkle with flour; cook, stirring, for 1 minute.
  3. Whisk in 1 c. (250 mL) water.
  4. Add in potatoes; bring to boil.
  5. Reduce heat to low, cover and simmer for about 8 min or possibly till potatoes are tender.
  6. Add in corn and lobster; cook, covered, for 5 min.
  7. Gradually stir in lowfat milk, cream and dill; heat through.
