%20it%20is%20always%20a%20tensed%20time%20when%20they%20are%20in%20the%20oven%20as%20I%20will%20be%20waiting%20%20to%20see%20how%20they%20are%20looking%20while%20they%20are%20in%20the%20oven%20and%20each%20time%20I%20see%20the%20beautiful%20feet%20apearing%20I%20have%20a%20big%20smile%20and%20even%20now%20I%20will%20be%20clapping%20my%20hands%20:-)%3C/p%3E%3Cp%3EEvery%20year%20this%20time%20of%20the%20year%20I%20always%20think%20of%20making%20macarons%20with%20christmasy%20colors,%20but%20then%20there%20are%20so%20much%20things%20to%20do%20around%20this%20festive%20time,%20it%20never%20happens.%3C/p%3E%3Cp%3E110gm%20icing%20sugar%3C/p%3E%3Cp%3E60gm%20almond%20flour%3C/p%3E%3Cp%3E60gm%20egg%20whites%20(of%202%20eggs)%20(%20Normally%20you%20have%20to%20age%20the%20egg%20whites,%20which%20I%20suggest%20you%20do%20too,%20but%20these%20days%20I%20find%20myself%20not%20agening%20them%20but%20I%20don't%20take%20the%20freshest%20egg,%20I%20just%20take%20egg%20which%20is%20atleast%20a%20week%20old%20and%20then%20make%20the%20Macarons%20when%20ever%20I%20want%20as%20I%20don't%20like%20the%20agening%20part%20of%20the%20whites%20as%20I%20am%20a%20impulisive%20baker,%20but%20don't%20listen%20to%20me%20age%20you%20eggs%20)%3C/p%3E%3Cp%3E40gm%20castor%20sugar%3C/p%3E%3Cp%3EFew%20drops%20of%20any%20food%20colour%3C/p%3E%3Cp%3EWhiz%20the%20almond%20flour%20and%20icing%20sugar%20in%20the%20coffee%20grinder%20and%20sift%202-3%20times%3C/p%3E%3Cp%3EWhisk%20the%20egg%20whites%20and%20castor%20sugar%20till%20it%20forms%20a%20thick%20aerated%20meringue,%20firm%20but%20not%20too%20dry.%3C/p%3E%3Cp%3ETurn%20the%20nut%20mixture%20into%20the%20bowl,%20and%20fold%20gently%20to%20get%20a%20lava%20type%20batter.Hold%20the%20tray%20firmly%20and%20tap%20the%20underside%20firmly.%20This%20should%20help%20to%20spread%20and%20smooth%20out%20the%20macarons.%3C/p%3E%3Cp%3ELeave%20out,%20uncovered%20for%2015%20minutes.%3C/p%3E%3Cp%3EMeanwhile%20preheat%20the%20oven%20to%20150C%20(the%20original%20recipe%20has%20170C).%3C/p%3E%3Cp%3EBake%20in%20preheated%20oven%20for%20about%2017%20to%2019%20minutes.%20They%20are%20ready%20when%20they%20readily%20leave%20the%20paper%20when%20liften%20with%20a%20palette%20knife.%20Remove%20from%20oven%20as%20soon%20as%20this%20happens,%20and%20leave%20to%20cool%20completely.%3C/p%3E%3Cp%3EI%20take%20out%20the%20macaron%20shells%20when%20I%20take%20them%20out%20from%20the%20oven,%20and%20I%20do%20this%20trick%20always,%20slpash%20a%20little%20bit%20of%20water%20unders%20the%20baking%20paper%20which%20allows%20the%20Macaron%20to%20lift%20from%20the%20baking%20paper%3C/p%3E%3Cp%3Eeasily.%3C/p%3E%3Cp%3E4%20tbsp%20of%20Advocaat%20(After%20mixing%20them%20and%20when%20i%20tassted%20they%20had%20good%20taste%20of%20Advocaat%20but%20when%20I%20filles%20them%20and%20ate%20together%20with%20the%20macarons%20they%20taste%20was%20not%20that%20much%20there%20so%20I%20will%20add%20lore%20advocaat%20next%20time)%3C/p%3E%3Cp%3EPut%20the%20sugar%20and%20egg%20whites%20in%20a%20large%20heatproof%20bowl%20over%20a%20saucepan%20of%20simmering%20water%20and%20whisk%20constantly,%20keeping%20the%20mixture%20over%20the%20heat,%20until%20it%20feels%20hot%20to%20the%20touch,%20about%203%20minutes.%3C/p%3E%3Cp%3EThe%20sugar%20should%20be%20dissolved,%20and%20the%20mixture%20will%20look%20like%20marshmallow%20cream.%3C/p%3E%3Cp%3EPour%20the%20mixture%20into%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20the%20whisk%20attachment%20and%20beat%20the%20meringue%20on%20medium%20speed%20until%20it%20cools%20and%20forms%20a%20thick%20shiny%20meringue,%20about%205%20minutes.%3C/p%3E%3Cp%3ESwitch%20to%20the%20paddle%20attachment%20and%20add%20the%20butter,%20one%20tablespoon%20at%20a%20time,%20beating%20until%20smooth.%20Once%20all%20the%20butter%20is%20in,%20beat%20in%20the%20buttercream%20on%20medium-high%20speed%20until%20it%20is%20thick%20and%20very%20smooth,%206-10%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20Advocaat%20to%20the%20buttercream%20and%20fold%20with%20a%20spatula%20until%20fully%20incorporated.%3C/p%3E%3Cp%3EIf%20not%20using%20right%20away,%20refrigerate%20for%20up%20to%20a%20week%20or%20freeze%20for%20up%20to%201%20month.%3C/p%3E){kind=link}
