Ingredients

  • 1 gal Onions, Minced
  • 1/4 gal Cucumber, Minced
  • 1/2 gal Green Tomaoes, Minced
  • 1/2 gal Celery, Minced
  • 1/2 gal Cauliflower, Minced
  • 6 x Bell Pepper, Minced
  • 6 pt Vinegar
  • 2 1/2 c. Sugar
  • 3/4 c. Grnd Mustard
  • 1 ounce Tumeric
  • 1/2 pt Extra virgin olive oil
  • 3/4 c. Flour
  • 1 tsp Grnd Cloves
  • 1 tsp All Spice
  • 4 tsp Black Pepper
  • 1 tsp Prepared Mustard

Directions

  1. Tie all spices into bag. Scald vegetables in 3 pints of vinegar and 3 pints of water. Drain and pour over mix as follows: Mix mustard, flour, oil, and tumeric with 1 pint of vinegar. Stir into 6 pints of vinegar while boiling having added sugar and spices. Add in all tied spices in mix. Let stand with vegetable while cooking not over 2 min.
  2. Place in canning jars and into warm water bath.
