Ingredients

  • 2 garlic cloves, peeled
  • 1½ c. fresh spinach leaves
  • ½ c. fresh cilantro
  • 2 serrano chiles, stemmed & seeded
  • 1 tsp. ground cumin
  • 1 tsp. dried Mexican oregano
  • ¼ tsp. ground cloves
  • ¼ tsp. ground cayenne
  • 2 Tbs. white wine vinegar
  • 1 tsp. finely grated lime zest
  • 1 tsp. salt
  • 1 tsp. ground black pepper
  • 1 lb. ground pork (80/20)
  • Raw chorizo will keep, well wrapped, in the refrigerator for up to one week or in the freezer for up to 6 months.
